A lighter, sweeter coconut sugar made by slow-cooking the filtered coco blossom sap. Has a delicate flavor comparable to raw cane sugar; complements light citrus or berry recipes; can also be used in vanilla custards, ice cream, and yogurts; does not darken the finished product as much; great for coffee, tea, yogurt, shakes, baking, and ice-cream making; not exposed to chemical refining. I bought two variants of the coconut sugar from Cocoro. Price-wise, they
are a little bit more expensive with what we buy at the supermarket.
The one that we usually buy is made locally and costs Php 100 for 250g. I
did get this at 20% off with beautyMNL's promotion so it basically
costs the same.

This Ivory variant tastes less sweet and less nutty so this is perfect for delicate dishes. I would say this has a cleaner, simpler flavor which is best paired with dairy products. The taste is is equivalent to the typical white cane sugar, though you can still detect the nuttiness from the coconut.

An aromatic, dark sugar made by cooking filtered coco blossom sap at a higher heat to allow caramelization. Great for baking since it has more aroma and bulking properties; creates a darker finished product; can be used for coffee, strong teas, chocolate, and caramel recipes; complements mocha and gingerbread; great for balancing red sauces and marinades. Perfect for substituting your brown sugar.
I much prefer the full-bodies flavor of the Dark Caramel version. With the well-defined nutty taste, it's almost dessert, even on its own. This is also more aromatic so the smell alone is enticing and adds to the sweet taste.
